Gutter extend 3/4" on spread layouts

I already have my layout in Quark, set up as 2-page spreads (singles, side by side). On each page the photo/illustration crosses over the gutter (gutter jump). How can I set the document up so I can still give you a 3/4" bleed in the gutter area without the other page/ image overlapping? Do I need to set the document up as single pages(in the page dialog box- one on top of each other instead of side by side. Also I have the art set within a frame 1/2" inside the trim all the way around. You only mention full bleed. Is the 1/2" white area ok with your process?
